Abstract

Thermotolerant yeasts, many with the ability to ferment sucrose at temperatures above 40°C, were isolated from Queensland (Australia) cane sugar mills. Identification tests were done on 44 isolates and diagnostic keys were used to identify them. Of the thermotolerant isolates, 35 were identified as var. Other thermotolerant strains were identified as spp. and spp. Additional tests were done on these and on seven reference strains. Data for 75 characters for 51 strains were analysed using the simple matching coefficient and average linkage clustering. Six phenons were recovered that corresponded to the species named above.
